Born and raised in the Andes mountains of Venezuela to a Peruvian father and a Colombian mother, José Luis Chavez, the co-founder and co-owner of Mission Ceviche, has culinary experience that spans three continents. José embarked on his culinary journey when he made the life-changing decision to move to Peru to study what he loved – cooking. Since he is of Peruvian heritage, he realized that moving to Peru would be the best way to perfect his cooking talents while getting in touch with his family’s roots.
Throughout his career, José Luis has traveled to France to open and coordinate two restaurants during the Cannes Film Festival. He served as executive chef at a Peruvian-Egyptian fusion restaurant in Lima, catered high-profile fundraising events, and has worked with renowned Peruvian chefs. José’s talent and creations captured the attention of Brice Mastroluca, and together they opened Mission Ceviche in July 2015.
